2 oz C.W. Irwin Bourbon
¾ oz Lemon Juice
1 oz Simple Syrup
1 Egg White
1 oz Distiller’s Choice Blackberry Cordial
CW Irwin Bourbon Cherries for Garnish

Add all liquid ingredients except the Blackberry Cordial to a clean shaker tin without ice. Shake vigorously for about one minute, then add ice and shake vigorously a second time to chill ingredients. Strain into a rocks or Collins glass. Then pour the Blackberry Cordial over the back of a bar spoon on top of the cocktail. This technique is referred to as a “float” and the cordial should stay evenly balanced at the top of the glass. Garnish with a skewer of fresh blueberries and a strawberry.

Hibiscus Bourbon-Rita


1½ oz C.W. Irwin Bourbon
¾ oz Lime Juice
½ oz Orange Juice
½ oz Hibiscus Simple Syrup*
Lime Wheel for Garnish
Salt (Optional for Rim)

Begin by running lime wheel around rim of martini glass. Now dip lightly in coarse salt. In clean shaker tin add all ingredients, then ice and shake gently to blend. Strain into prepared martini glass, garnish with lime wheel.

A wonderful idea for those wanting to have a tart drink without being overly sweet. Light floral notes from the hibiscus flowers compliment orange notes alongside a delicious bourbon to make this vibrant “bourbon-rita” a good fit for all palates. It’s also a great option for preparing in large batches for group parties.

½ oz Ginger Liquor
¾ oz Lemon Juice
¾ oz Honey
3 oz Hot Water
Candied Ginger Garnish

Begin by filling mug with boiling water to warm. After one minute discard water and begin building cocktail in glassware. Add all ingredients into mug and stir until honey is well mixed. Garnish with a skewer of candied ginger.

A drink as enjoyable as it is easy to make, this one is sure to please a diverse crowd. Light notes of spice & lemon sweetened with honey makes a well-rounded bourbon drink. During Central Oregon’s chilly evenings this cocktail has been a hit served hot. It’s a take on the traditional Toddy but it also serves well as a chilled martini in the warmer Spring temperatures.

Sparkling Wild Sazerac


1/2 oz Wild Card Absinthe
2 oz C.W. Irwin Bourbon
1 Sugar Cube
2 Dashes Bitters
Soda Water
Lemon Twist

For a tasty variation of a traditional sazerac, pour Wild Card, C.W. Irwin Bourbon, sugar cube and bitters in a rocks glass and muddle well. Fill glass with ice. Top with small amount of soda water and stir. Add lemon twist for garnish.

Try this cranberry bourbon cocktail recipe for the holiday season. It’s a festive drink reminiscent of fall, and the winter spices add a nice touch with a slight effervescence.

2 oz C.W. Irwin Bourbon
½ oz Brown Sugar Simple Syrup
2 Whole Cloves
1 0z Cranberry Juice
Hard Cider
Cranberries for Garnish

Fill shaker tin with ice. Add C.W. Irwin Bourbon, Cranberry Juice, Simple Syrup and Whole Cloves. Shake, strain into martini or coupe glass then top with Hard Cider. Garnish with fresh or frozen whole cranberries.

2 oz C.W. Irwin Bourbon
2 oz Chai Tea Concentrate
1 Bar Spoon Honey
2-4 Drops Wild Card Absinthe
Orange Wheel for Garnish

Begin by warming the chai tea, either in a pan or with an electric kettle. The chai portion can be very hot, as this is the only component which will be heated. Now add a bar spoon of honey to coffee mug. Add C.W. Irwin Bourbon and hot chai tea. Stir until honey is well mixed. Finish with a few drops of Wild Card Absinthe and garnish with orange wheel.

Bourbon ‘N Spice













2 oz C.W. Irwin Bourbon
1.5 oz Apple Cider
.5 oz Brown Sugar & Cinnamon Simple Syrup
.5 oz Lemon Juice

Add all ingredients to shaker tin filled with ice. Shake and strain into a coupe or martini glass. Garnish with Orange Zest or Cinnamon Stick.

.5 oz Wild Card Absinthe
2 oz Chai Tea Concentrate

Begin with a shaker tin full of ice, add Wild Card Absinthe and stir until the liquid is white in color. Now add C.W. Irwin Bourbon and Chai Tea. Stir and strain into chilled rocks glass with ice.


Central Oregoni

Central Oregoni Cocktail

2 oz C.W. Irwin Bourbon
1 oz Sweet Vermouth
2 oz San Pelligrino Blood Orange

Fill Lowball Glass with ice. Add C.W. Irwin Bourbon and Sweet Vermouth, stir. Top off glass with ice and fill with San Pelligrino Blood Orange.


Whiskey Sour


1 1⁄2 oz CW Irwin Bourbon
3⁄4 oz Simple Syrup
Juice from 1⁄2 a lemon
3⁄4 oz Egg White

Fill cocktail shaker with ice, add all ingredients, and shake vigorously. Shake very hard to get the ingredients to emulsify and form a layer of foam on top of the cocktail. Strain into a chilled Old Fashioned glass.
